Premium Gold Gluten-free Oven Fried Chicken 1 Picture

Ingredients

  • 1 (2 to 3 pound) broiler-fryer chicken, cut in serving pieces
  • 1 cup Premium Gold® Gluten Free Flax & Ancient Grains All-Purpose Flour
  • 1/4 tsp. pepper
  • 2 tsp. paprika
  • 2 tsp. salt (I prefer less salt, <1 tsp)
  • 1/2 cup butter

Preparation

Step 1

1. Preheat oven to 375F
2. Wipe the chicken pieces with a damp cloth and dry with paper towels. If there are pin feathers, remove with tweezers.
3. Put the PG GF Flax AP Flour, salt, pepper and paprika in and strong paper bag, if you don’t have a paper bag you can use a plastic one. Add a few pieces of chicken at a time and shake to coat with the flour mixture.
4. Set a 13x9x2 inch oven proof pan set in the oven with the butter in it, to melt.
5. Add the chicken pieces and turn over to coat it with the melted butter. Arrange skin side down, in one layer, in the pan. Do not let the pieces touch.
6. Place the pan in the center of the preheated oven for 1 hour or until the chicken is tender and cooked all the way through. Makes 4 to 5 servings.

For a change you may use only ¾ tsp. salt and add ¾ tsp. garlic salt. Or mix into the flour mixture, 1 tsp. poultry seasoning, or other spice as preferred.

Variation: I have used coconut flour, then fried it in coconut oil in skillet.
