Ingredients
- 3 tablespoons light rum
- 2 1/2 tablespoons Honey Simple Syrup
- 2 tablespoons fresh lime juice
- Splash of club soda
- Garnishes: fresh mint leaves and sprigs

Step 1
1. Stir together first 3 ingredients in a glass filled with ice. Add a splash of soda. Garnish, if desired.
Honey Simple Syrup
Ingredients
1 cup loosely packed fresh mint leaves
1 cup honey
Preparation
1. Stir together mint, honey, and 1 cup water in a small saucepan over medium-high heat. Bring to a boil, stirring occasionally, and boil 1 minute or until honey is dissolved. Remove from heat, and let stand 30 minutes. Pour through a wire-mesh strainer into a cruet or airtight container, discarding mint leaves. Cover and chill 4 hours. Store in refrigerator up to 2 weeks.
