Ingredients

  • 1/4 cup all-purpose flour
  • 1/4 cup cornmeal
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1 large egg
  • 2 tablespoons butter, melted
  • 1 tablespoon honey
  • Salted butter, for serving

Preparation

Step 1

1. Place all of the dry ingredients in a mixing bowl and whisk together to combine. In a separate mixing bowl, add the milk, egg, butter, and honey and whisk to mix well. Pour the wet ingredients into the dry ingredients and stir just until the batter comes together.

2. Line the Emeril by T-fal Pie & Cake Maker with cupcake liners and plug in the machine. Once the green ready light is lit, divide the batter evenly among the liners, about 1/4 cup of batter each. Close the lid and cook until muffins are puffed and lightly golden on the bottom and edges and a toothpick inserted into the center comes out clean about 10 minutes.

3. Remove the muffins and serve warm with a pat of butter.
