Ingredients

  • 2 (8 oz) packages cream cheese (at room temperature)
  • 2 eggs
  • 3/4 cup sugar
  • 1 T. lemon juice or lemon concentrate
  • 1/2 t vanilla flavoring
  • 20-24 vanilla wafers
  • 20-24 foil lined cupcake papers
  • Cherry fruit pie filling

Preparation

Step 1

Cream cream- cheese together with sugar, eggs, lemonjuice, and vanilla flavoring.

Place cupcake papers on baking sheet or in a muffm pan

Place a vanilla wafer in each cupcake paper

Fill halfway with cream cheese mixture

Bake at 350 degrees for 20...25 minutes or until firm.

Cool

Spoon pie filling on top of each cheesecake.

Chill.

Prior to serving, you can remove cupcake papers and place cheesecakes on serving tray.
