Broiled Cod w/ Warm Corn & Sweet Onion Relish

Ingredients
- 1/2 c. chopped sweet onion
- 1 med. ear fresh corn kernels, cut off cob
- 1 1/2 T. white wine vinegar
- 1/4-1/2 t. dry mustard, to taste
- 1/4 t. each salt & pepper, to taste
- 8 oz. cod fillets

Preparation
Step 1
Preheat broiler. Coat pan with cooking spray.
Saute onion 3-4 minutes, then add corn and cook 2 minutes longer.
Lower heat to medium & add vinegar, mustard, salt & pepper. Cook, stirring 1 minute & remove from heat.
Lightly coat cod with cooking spray & broil, 4-6 inches from heat until browned & opaque. Total cooking time should be 10 min. per inch thickness of fish.
Serve with corn relish.
