Ingredients
- 1 cup all purpose Flour
- 1.5 tsp Kosher Salt
- 1/2 tsp fresh ground Black Pepper
- 2 Eggs
- 1 tbsp Milk
- 1 cup Panko bread crumbs
- Zest of 1 Lemon
- 1 tbsp of dried Rosemary
- 4 veal cutlets, pounded 1/6 inch thick between sheets of plastic wrap
- 2 cups Extra Light Tasting Olice Oil ( or some oil good for Frying )
- For the fried Lemon slices
- 3 tbsp Flour
- 2 tbsp Polenta
- Salt and Pepper, to taste
- 2 Lemon slice

Preparation
Step 1
Mix the Flour with Salt and pepper
Mix the Eggs with Milk
Mix the Bread crumbs with the Lemon Zest and the Rosemary
For the fried lemon mix the Flour, the Polenta little Salt and Pepper and set aside
1) coat the Cutlet in flour and shake it off a bit
2) place it in the Eggs wash and shake it off a bit
3) place it in the Bread crumbs mixture and pat it with your hand to make the crumbs stick to the cutlet. Let rest for about 15 minutes
Coat the Lemon with the Polenta mix making sure that the mix attaches very well to the lemon wedges, let rest for 10 minutes
With the help of a thermometer bring the Oil to 350 degrees
Fry one Cutlet at a time and let it rest for 5 minutes on top of a piece of paper towel
Repeat with the Lemon and serve together
