Ingredients
- 2 Tbsp evoo
- 2 Tbsp honey
- 1 Tbsp white wine vinegar
- 1 tsp Dijon mustard
- 2 Tbsp minced scallion
- 1/4 cup fresh raspberries
- 1/4 cup fresh blueberries
- 1/4 cup fresh backberries
- 1/4 cup fresh tart cherries, pitted and halved
- 12 oz cooked boneless, skinless chicken breasts, cut into 1-inch pieces
- 8 cups mixed salad greens

Step 1
1. In a large bowl, whisk together olive oil, hiney, vinegar, mustard, salt and pepper to taste. Add minced scallion. Carefully stir in berries and cherries. Add diced chicken and gently toss so as not to crush berries.
2. Arrange greens on serving plates, top with chicken mixture, and serve immediately.
