CHUNKY APPLE DROPS

Ingredients

• 1 1/2 cups flour
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1/2 tsp salt
• 1 tsp cinnamon
• 1/4 tsp nutmeg
• 1/4 tsp instant coffee
• 1 tbsp hot water
• 3/4 cup soft shortening
• 1 cup brown sugar
• 1 egg
• 1 tsp vanilla
• 1 cup finely chopped apple
• 1 1/2 cups rolled oats
• 1/2 cup raisins
• Granulated sugar

Preparation

Step 1

Combine dry ingredients. Dissolve instant coffee in hot water. Add shortening, brown sugar, egg, coffee-water mixture and vanilla. Beat until well blended. Stir in chopped apple, rolled oats and raisins. Shape into small balls, dip in sugar, place sugar side up on baking sheets. Bake at 375F for 15 minutes.
