Ingredients
- 8 eggs separated
- 1 1/2 Cups sugar
- Juice of 1 lemon
- 1 Cup sifted Matzo Cake Flour
- 1/4 tsp salt
- sifted powdered sugar for top of cake if desired

Preparation
Step 1
Separate eggs.
Beat yolks til creamy in a large bowl on high speed.
Add sugar gradfually beat till light & fluffy.
Add lemon juice on low speed.
Add Matzo Cake Flour and salt.
Beat egg whites in separate bowl till the stand in peaks.
Fold whites into creamed mixture.
Bake in ungreased tube pan at 350 for 45 minutes
Cool upside down before removing from pan.
Sift powdered sugar on top if desired
