- 1 batch of Banana Cupcakes
- 1 batch of Chocolate Ganache Glaze
- 2-1/2 cups heavy cream
- 1/3 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 4 bananas, sliced
- 1 cup mashed strawberries, strawberry jam or ice cream topping
- 13/4 cup chopped peanuts
- 24 maraschino cherries

Preparation
Step 1
Prepare one batch of banana cupcakes and chocolate ganache glaze.
Prepare the Whipped Cream.
Place the cream in a large mixing bowl (or bowl of a stand mixer fitted with the whisk attachment). Use an electric mixer on high speed to beat cream until it begins to thicken. Add sugar and vanilla. Continue beating until the cream holds a stiff peak.
Use a small round pastry cutter or spoon to cut out the center of each cupcake. You are looking to go down about 1-inch into the cupcake. Place one banana slice in the bottom of each cupcake center. Fill cupcake centers with mashed strawberries, jam or ice cream topping until level with the tops of the cupcakes. Place one more banana slice on top of each strawberry-filled cupcake center.
Spoon a dollop of whipped cream on top of each cupcake; trying to keep the shape as round as possible. Use either a fork or whisk to drizzle chocolate ganache glaze over the cupcakes. Sprinkle chopped peanuts over the cupcakes and finish them off with a maraschino cherry in the center of each cupcake. Store tightly covered in the refrigerator for up to 3 days.
