Ingredients

  • 1 lb squid tubes
  • 1 cup semolina flour
  • vegetable oil for frying
  • salt
  • Cajun Remoulade Sauce
  • 1 cup Mayonnaise
  • 2 Tbl lemon juice
  • 1 Tbl grated horseradish
  • 2 cloves garlic, crushed
  • 1/2 tsp hot sauce (or more)
  • 1 pinch Cayenne
  • 2 Tbl chopped cornichon
  • 1 Tbl chopped capers
  • 1 Tbl chopped fresh parsley
  • salt

Preparation

Step 1

1. Cut across squid tubes (about 1/4 - 1/2" wide) to form rings.
2. Dredge squid in flour until fully coated.
3. Fry in oil for about one minute at about 350 degrees.
4. Remove to a paper towel to rain.
5. Season with salt.

Sauce preparation
Combine all ingredients in a bowl.
