Ingredients

  • 2 T water
  • 3/4 c plus 1 T liquid pectin
  • 1/2 t baking soda
  • 1 1/4 c lt corn syrup
  • 3/4 c granulated sugar
  • 1 t cherry, mint or orange extract
  • food coloring, if desired
  • 1 T fresh lemon juice
  • Conf sugar for dusting

Preparation

Step 1

In large saucepan combien water and pectin, then stir in the b soda. The mixture will form and become frothy. In another large saucepan, combine corn syrup & gran sugar.

Place both saucepans over high heat and bring to a boil, cooking 4-5 min and stir both constantly. When the pectin mixture has stopped foaming and the sugar mixture is boiling, gradually pour the pectin mix into the sugar mix, stir constantly. While continue to stir, bring back to boil and boil 1 min. Add extract and coloring. Remove from heat and stir in lemon juice. Pour into an 8" sq glass baking dish and let stand 3-4 hours, or until set and firm.

Cut into 1" squares and remove them from the pan. Dust thoroughly with conf sugar and place them on wire racks to dry for at least 12 hours or up to 18 hours. To store, dust again with conf sugar on all sides and pack in layers, separted by waxed paper in airtight tin. Will keep up to 3 weeks.
