Spinach Salad

Ingredients

• Dressing:
• 1 lb baby spinach, cleaned and dried
• 2 hard boiled eggs, chopped
• 1 sm red onion, chopped
• 6 slices crisp bacon
• pepper
• 1 cup oil
• 1/4 cup & 2 T wine vinegar
• 2 T. lemon juice
• 5 T. sugar
• 1 tsp salt
• 1 tsp dry mustard
• 1 tsp grated onion

Combine dressing ingredients and refrigerate if not using right away. Combine all salad ingredients and toss.
