Ingredients

  • 3 3/4 cups flour
  • 2 cups sugar
  • 4 eggs
  • 2 egg yolks
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups almonds whole (or roughly chopped), toasted

Preparation

Step 1

Set the oven at 350F. Place the flower in a bowl. Using a wooden spoon, make a well in the center. Place the sugar, 3 of the eggs, the yolks, baking powder, salt, vanilla and almond extract in the well. Gradually work the flower into the ingredients and mix well until smooth. Stir in the almonds. Lightly grease 2 baking sheets with butter, then flour. Divide the dough into quarters and on a lightly floured surface roll them into 2 1/2 inch logs. PLace the logs at least 2 inches apart on the sheets. Beat the remaining egg and brush the tops of the logs with it. Bake for 30 to 35 minutes in the preheated oven or until the tops are golden brown.
Turn the oven down to 325F. Using a sharp knife, cut the logs diagonally into one inch slices and lay them cut side up on the sheets. Return to the oven and bake for 10 minutes. Turn the biscotti and continue to bake for 5-10 minutes more or untl nicely browned. Remove from the oven and allow to cool on the sheets.
They can be stored in a tin.
