  • 1/2 cup butter, melted
  • 1/2 cup flour
  • 4 cups milk
  • 1/2 cup buttermilk
  • 1 teaspoon salt
  • 2 teaspoons pepper
  • 6 eggs
  • 1 cup buttermilk
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire
  • 1 teaspoon salt
  • 1/2 cup flour
  • 6 (4 ounce) pieces cube steak
  • 1/2 cup vegetable oil

Step 1

To make the gravy, stir together the butter and flour in a small bowl until smooth and well combined. Combine the milk and buttermilk in the top of a double boiler and bring to a simmer over medium heat. Whisk the butter mixture into the simmering milk mixture. Simmer, stirring frequently, for 10 to 15 minutes, until the gravy thickens. Stir in the salt and pepper, decrease the heat to low, and keep the gravy warm over the gently simmering water. Stir well before serving.

Make an egg wash by whisking together the eggs, buttermilk, hot sauce, Worcestershire sauce, and salt in a bowl. Place the flour in a shallow bowl. Dip the steak into the flour, then the egg wash and back into the flour, gently shaking off any excess. Set aside in a single layer.

Heat the oil in a large skillet over medium high heat. Add the meat and fry, turning once, for 3 minutes on each side, until cooked through and golden brown on both sides. Transfer to a serving platter, ladle the gravy over the meat, and serve hot.
