Richer Than Sin White Chocolate Cheesecake

Ingredients
- Crust:
- 1-3/4 cups graham cracker crumbs
- 6 tablespoons sweet butter, melted and clarified
- 1 tablespoon castor sugar
- 1 teaspoon grated nutmeg
- 1 teaspoon sweet butter, softened
- Filling:
- 10 ounces white chocolate, broken up
- 1/2 cup heavy cream, at room temperature
- 16 ounces cream cheese, softened and cubed
- 4 large eggs, separated, at room temperature
- 4 teaspoons vanilla
- 1 dash salt
- Topping:
- 6 ounces white chocolate, broken up
- 1/4 cup heavy cream, at room temperature
- 2 tablespoons light creme de cacao

Preparation
Step 1
Crust:
1. Butter springform pan with softened butter.
2. Combine graham crackers, melted butter, nutmeg and sugar in bowl until well mixed.
3. Press evenly over bottom and up 2/3 of the side of the pan; set aside.
Filling:
4. Preheat oven to 300 degrees F.
5. Melt chocolate in double boiler.
6. Slowly stir in cream until smooth.
7. Remove from heat and let cool slightly.
8. In large bowl, with electric mixer on medium speed, beat cream cheese until smooth.
9. Add egg yolks, one at a time, making sure to blend well, stopping to scrape down sides of bowl after each addition.
10. Add chocolate mixture, vanilla and salt.
11. Beat at medium speed for 2 minutes.
12. Beat egg whites in a separate mixing bowl, with electric mixer on low speed, until foamy.
13. Beat on high until soft, rounded peaks form.
14. Fold egg whites into chocolate mixture.
15. Pour into crust.
16. Place pan on baking sheet and bake at 300 degrees F for 55 minutes; the cake will rise and the top will wiggle slightly when shaken.
17. Turn off the heat and let cake stand in oven for 1 hour.
18. Remove cake from oven and place on wire rack in a draft-free place and cool cake to room temperature.
Topping:
19. Melt chocolate in double boiler.
20. Slowly stir in cream until mixture is smooth.
21. Stir in flavoring.
22. Pour topping over cool cake.
23. Cover and refrigerate overnight.
