Ingredients
- 1 chicken breast
- 2 quarts chicken broth
- 1/3 cup chopped onion
- 1/3 cup chopped celery
- 1 tablespoon peeled and finely minced carrots
- 8 ounces fettucine noodles, broken into short lengths

Preparation
Step 1
In a small pan over medium heat, cook the chicken breast for 5 to 7 minutes on both sides until opaque when sliced open with a fork. Transfer the chicken to a cutting board. Finely chop and set aside.
Combine the broth, onion, celery and carrots in a large saucepan. Bring to a simmer over medium high heat and cook for 2 to 3 minutes, until the vegetables are tender. Add the noodles and cook for 5 minutes, until tender. Stir in the chicken and heat through. Stir in the salt and pepper. Serve at once or cool, cover and refrigerate for up to 1 week.
