Ingredients

  • Chicken
  • 3 Large Chicken cutlets, sliced thin and pounded
  • 3 oz flour
  • Salt and pepper
  • 4 oz butter
  • 3/4 lb mozzarella cheese
  • 6 oz proscuitto
  • Brown Sauce
  • 3 Tbs Butter
  • 4 Tbs Flour
  • 1 1/2 cups chicken boullion
  • 1 1/2 cups beef boullion
  • 1/2 Sherry or maderia wine
  • 1/4 tsp caramel coloring

Preparation

Step 1

1. Dredge chicken in flour and salt and pepper.

2. Saute chicken in butter until golden brown. Lay each piece in large baking pan. Cover each piece with a piece of proscuitto.

3. Add 3 tbs of butter to pan. Mix sherry/madiera with flour. Add broth and sherry to pan and stir constantly until thick. Add carmel coloring.

4. Pour sauce over chicken and sprinkle shredded cheese over chicken.

5. Bake at 350 for 1/2hr to 45 min until cheese melted and golden brown.

Serve over pasta and fresh vegetable.
