Ingredients

  • Citrus Cream Cheese Frosting:
  • 1 pkg lemon cake mix
  • 1/2 cup orange juice
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1/8 tsp finely shredded lemon zest
  • 1 1/2 cups fresh or drained frozen blueberries
  • 1 tbsp finely shredded orange zest
  • 1 tbsp finely shredded lemon zest
  • 1/4 cup butter, softened
  • 3 oz cream cheese, softened
  • 3 cups powdered sugar, sifted
  • 2 tbsp orange juice
  • 1/8 tsp vanilla extract
  • 1 cup whipping cream, whipped
  • 2 tbsp grated orange zest
  • 1 tbsp grated lemon zest

Step 1

1. For the cake, mix the cake mix, orange juice, water, oil, eggs and 1/8 tsp lemon zest in mixing bowl. Beat at low speed for 30 seconds. Beat at medium speed for 2 mins. Fold in blueberries, orange zest and 1 tbsp lemon zest.

2. Spoon into 2 greased and lightly floured 8 or 9" round cake pans. Bake at 350 for 35-40 mins or until a wooden pick inserted near center comes out clean. Cool in pans on wire racks for 10 mins. Remove to wire racks to cool completely.

3. For the frosting, cream butter and cream cheese in medium mixing bowl until fluffy. Add powdered sugar, orange juice and vanilla and beat until smooth. Add whipped cream, orange zest and lemon zest and beat at low speed to mix well. Spread frosting between layers and over the top and side of the cake. Garnish with orange zest curls.
