Ingredients

  • 1 cup quinoa
  • 2 cups good quality water
  • 1/2 bunch cilantro, basil or parsley, chopped
  • 1 diced tomato
  • 1 stalk of celery
  • 1/2 avocado
  • 1/4 t chili powder
  • 2 t cumin
  • 1/2 - 1 t Himalaya salt or sea salt
  • 2 T olive oil
  • 2 T lemon juice
  • optional 1/2 bell pepper and a clove of garlic
