Cucumber Vinegar Salad

This is the simplest and freshest salad imaginable.
It is critical that you use Nakano Seasoned Rice Vinegar Original. None of the flavored version work with this recipe.
The vinegar is complex, sweet and tart.

Ingredients
- 3 cucumbers
- 1 small, sweet (Vidalia) onion - optional
- 1/2 cup of Nakano Season Rice Vinegar Orignal
- 1 cup water

Preparation
Step 1
You can either peel the whole cucumber or just cut little stripe design lengthwise.
Chop the onion and slice the cucumber thinly and add them to a container with a cover.
Pour in the vinegar and water. If you need more, just add 2 parts water to 1 part vinegar. Put it in the fridge overnight and it is fantastic. Lasts a week or more and it gets better and better.
