Snuggled between tenders slices of beef tenderloin lie fresh mushrooms, green onions, garlic, and parsley. The stuffing mixture is then topped with crumbles of blue cheese which melts.

Ingredients

  • 1- 3 lb beef tenderloin
  • 2 T butter
  • 1-8 oz package sliced fresh mushrooms
  • 4 green onions, chopped
  • 1 clove garlic, minced
  • 2 T chopped fresh parsley
  • 3 T crumbled blue cheese
  • 1 T butter, melted

Preparation

Step 1

Slice tenderloin lengthwise to, but not through the center, leaving 1 long side connected, set aside.
Melt 2 T butter in large skillet over medium-high heat. Add mushrooms and next 3 ingredients, cook 5 minutes or until tender, stirring often.
Spoon mixture into opening of tenderloin, leaving a 1/2 inch border on all sides. Sprinkle cheese over mushroom mixture. Close tenderloin and tie securely with heavy string at 2-inch intervals. Brush with melted butter.
Prepare a hot fire by piling charcoal on each side of water filled pan. Coat food rack with cooking spray. Place tenderloin on rack. Grill covered 45 minutes or until meat thermometer registers 145 on thickest part of tenderloin. Let stand 10 minutes before slicing.
