Ingredients

  • 4 - 8 oz pork tenderdloins
  • 2 c unsweetened pineapple juice
  • 1 t ground cinnamon
  • 1 t ground ginger
  • 1/2 t salt
  • 4 fresh pineapple slices, 1/2" thick (or 4 canned pineapple slices)
  • 2 oz slivered almond pieces
  • 2 T fresh cilantro, chopped
  • nonfat cooking spray

Preparation

Step 1

Remove any visible fat from pork and place in flat glass pan. Combine juice, cinamon, ginger & salt and pour over pork. Cover tightly and refrig for 2-12 hours. Coat grill with cooking spray and preheat 5 min. Grill pork 3 min. Top each tenderloin with 1 pineapple slice. Grill 2-3 min or according to preference. Garnish each with slivered almonds and cilantro to serve
