Ingredients
- 2 Cups sugar
- 2 1/2 cups gluten free flour mix (or 1 cup rice flour, 1 1/2 cups corn starch)
- 1/2 tsp salt
- 3 tsp baking powder
- 1 tsp xanthan gum
- 4 eggs
- 1 cup oil
- 1 cup milk or water
- 2 tsp vanilla

Step 1
Preheat oven to 350 degrees Celcius.
Mix together dry ingredients.
Add wet ingredients and beat for 3-5 min.
Pour into greased and floured cake pan or paper lined muffin tins. Bake for 35-40 minutes (20 min for cupcakes).
Cool and add icing, fruit and whipped cream, or just icecream!
