Ingredients
- Crust:
- 1 cup graham crackers
- 3 tablespoons sugar
- 3 tablespoons margarine, melted
- Cake:
- 16 ounces cream cheese
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon grated lemon peel
- 2 eggs, separated
- Topping:
- 1 cup sour cream
- 2 tablespoons sugar
- 1 teaspoon vanilla

Step 1
Crust:
1. Combine crumbs, sugar and melted butter.
2. Press into bottom of a 9" springform pan.
3. Bake at 325 degrees F for 10 minutes.
Cake:
4. Beat cream cheese, sugar, lemon juice, lemon peel and vanilla; mixing at medium speed until well blended.
5. Add egg yolks, one at a time, mixing after each addition.
6. Beat egg whites until stiff.
7. Fold whites into cream cheese mixture.
8. Pour over prepared crust and bake at 300 degrees F for 45 minutes.
Topping:
9. Combine sour cream, sugar and vanilla, carefully spread over cheesecake.
10. Bake at 300 degrees F for 10 minutes.
11. Remove from oven and run knife around sides of pan to loosen.
12. Cool at room temperature before removing rim.
