Ingredients
- 1/2 cup sugar
- 3 egg yolks
- 1 (20 ounce) can crushed pineapple, undrained
- 2 1/2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 tablespoon freshly squeezed lemon juice
- 1/2 recipe pie pastry
- 1 recipe Mrs. Rowe’s meringue

Step 1
Preheat the oven to 300.
In a bowl, combine ¼ cup of the sugar and the egg yolks and whisk well.
Place the pineapple and its juice in a saucepan and heat over medium high heat. In a bowl, stir together the remaining ¼ cup sugar, the cornstarch and salt. When the pineapple begins to simmer, stir in the sugar mixture and cook, stirring constantly, for 5 minutes, until thickened. Stir in the egg yolk mixture a tablespoon at a time and cook, stirring constantly, for 1 minute. Remove from the heat and stir in the lemon juice. Set aside to cool to room temperature.
Scrape the filling into the pie crust and top with the meringue. Bake for about 30 minutes, until golden brown. Transfer to a wire rack to cool to room temperature and then refrigerate for at least 1 hours, until chilled. Serve cold.
