Grilled Mahi Mahi with Red Pepper Puree and PEsto

Ingredients
- 1/2 c. white wine
- 2 shallots, minced
- 3 cloves garlic
- 1/3 c. chooped walnuts
- 1 tbsp. olive oil
- 1/4 c. basil
- 1/8 tsp. fresh ground pepper
- 12 oz. roasted red peppers
- 4- 6 oz. fillets of mahi mahi
- salt and pepper
- 1 tbsp. butter
- 1/8 tsp fresh ground pepper
- 1/4 tsp. sea salt
- 2 tbsp. grated parmesan cheese

Step 1
1. In small pan on medium/high heat the white wine and shallots- bring to boil. REduce heat to medium/low and cook for 4 minutes- set aside.
2. In food processor- combine walnuts, cheese, garlic. Add olive oil, basil, 1/8 tsp. pepper- process until smooth.-set aside.
3. In food processor combine red peppers with white white reduction- process and pour back into saucepan and bring to boil on medium/high heat. Once boiling, drop to medium and simmer for 4 minutes. Whisk butter, 1/8 tsp pepper and salt into pepper puree.
4. Little pepper, little sea salt on fish fillets- throw on grill and cook for 4-6 miinutes on both sides.
5. On serving platter- put red pepper puree on bottom, than fillets in platter, and top with pesto. Serve and enjoy.
