Ingredients
- Three 5 ounce cans solid white tuna, packed in water
- 1 stalk celery
- 1/3 cup finely diced white onion (quarter of a medium)
- 3/4 cup mayonnaise
- Pinch of salt
- Pinch of white pepper
- 1 teaspoon freshly squeezed lemon juice
- 8 slices rye bread
- 8 slices tomato
- 12 to 16 romaine leaves or mixed greens

Preparation
Step 1
Drain the cans of tuna so that most of the water is removed. Place the tuna in a large mixing bowl. With a vegetable peeler or knife, peel the top layer off the celery stalk. Finely dice. Add the celery and onion dice to the tuna. Add the mayonnaise, salt, pepper, and lemon juice. Mix together the ingredients with clean hands. Crush together the mixture with your fingers until well combined, making sure to bread up large chunks of tuna.
Toast the bread.
Assemble each sandwich with 2/3 cup tuna salad, 3 to 4 pieces of lettuce, and 2 slices of tomato.
