Ingredients
- 1 recipe plain pie pastry or vinegar pie crust, unbaked
- 1 cup plus 1 teaspoon sugar
- 2 tablespoons flour
- Pinch of salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 7 tart apples, peeled, cored and sliced
- 1 tablespoon freshly squeezed lemon juice
- 2 tablespoons butter, thinly sliced
- 2 tablespoons butter, melted

Step 1
Preheat the oven to 450. Line a 9 inch deep dish pie plate with 1 piece of the dough, leaving an inch of overhang.
In a large bowl, combine the 1 cup sugar, the flour, salt, cinnamon and nutmeg and stir well. Add the apples, sprinkle them with the lemon juice, and toss to coat with the flour mixture. Fill the crust with the apple mixture and dot with the butter slices. Place the other piece of dough on top, crimp the edges, and trim off any excess dough. Cut six 2 inch slits in the top crust for steam vents. Sprinkle the 1 teaspoon sugar over the top. To prevent the edge of the crust from getting too brown, gently fold a strip of foil around the crimped edge.
Decrease the oven temperature to 350 and bake the pie for 55 to 60 minutes, until the apples are tender and the crust is golden brown. Remove the foil during the last 10 minutes of baking. Remove the pie from the oven and brush the top with the melted butter. Transfer to a wire rack to cool. Serve warm or at room temperature.
