Ingredients
- oil or melted butter, for greasing (if using)
- 2 c all purpose flour (may use whole wheat, bran, rolled oats, oatmeal, wheat germ, or cornmeal for up to 1/2 of this quantity)
- 1 T baking powder
- 1/2 t baking soda, if using yogurt
- 1/8 t salt
- heaping 1/2 c superfine sugar or firmly packed brown sugar (for savory omit sugar)
- 2 large eggs
- 1 c milk (or buttermilk, yogurt, sour cream, cream, coconut milk, fruit juice or fruit puree)
- 6 T sunflower oil or melted cooled butter
- 1 t vanila extract

sift dry ingred. Mix wet ingred. make well in dry ingred & mix wet ingred just until mixed
bake 400* oven 20 min in greased muffin pans
