Ingredients

  • Crust:
  • 2 cups Oreo cookie crumbs
  • 1/2 cup sugar
  • 6 tablespoons butter, melted
  • Filling:
  • 2-1/4 pounds cream cheese, at room temperature
  • 1-2/3 cups sugar
  • 5 eggs, at room temperature
  • 1 cup Bailey's
  • 1 tablespoon vanilla extract
  • 1 cup semisweet chocolate chips
  • Coffee Cream:
  • 1 cup whipping cream, chilled
  • 2 tablespoons sugar
  • 1 teaspoon instant coffee powder

Preparation

Step 1

Crust:
1. Preheat oven to 325 degrees F.
2. Coat a 9" springform pan with vegetable cookie spray.
3. Combine crumbs and sugar in pan.
4. Stir in butter.
5. Press mixture into bottom and 1" up the side of the pan.
6. Bake until light brown, about 7 minutes.
7. Keep oven at 325 degrees F.

Filling:
8. Beat cream cheese until smooth with electric mixer.
9. Gradually add sugar.
10. Add eggs one at a time.
11. Then add Bailey's and vanilla.
12. Sprinkle half the chocolate chips over the crust.
13. Spoon in filling.
14. Sprinkle remaining chocolate chips over filling.
15. Bake until cake is puffed, springy in center and golden brown, about 1 hour and 20 minutes.
16. Cook cake completely in refrigerator.

Cream:
17. Beat cream, sugar and coffee powder until peaks form.
18. Spread mixture over cooled cake.
19. Garnish with chocolate curls.
