  • 1/2 cup butter, at room temperature
  • 2 cups sugar
  • 2 eggs
  • 4 ounces unsweetened chocolate, melted and cooled
  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1 1/2 cups milk
  • 2 teaspoon vanilla
  • 1/2 cup butter
  • 2 ounces unsweetened chocolate
  • 1 1/2 cups icing sugar
  • 1 egg, lightly beaten
  • Pinch of salt
  • 1 teaspoon vanilla

Preparation

Step 1

Preheat the oven to 350. Grease and flour two 9 inch cake pans.

Combine the butter and sugar in a large bowl and beat with an electric mixer until light and fluffy. One at a time, add the eggs, beating well after each addition. Mix in the chocolate. Sift the flour and baking powder together into another bowl. Add the flour mixture alternately with the milk to the chocolate mixture, beginning and ending with the dry ingredients. Stir in the vanilla. Pour the batter into the prepared pans and bake for 25 minutes, until a knife or toothpick inserted into the center comes out clean. Remove the cakes from the oven and allow to cool in the pans on a wire rack for 10 minutes. Turn the cakes out onto the rack and cool completely.

To make the icing, melt the butter and chocolate in the top of a double boiler set over simmering water. Remove from the heat and stir in the sugar, egg, salt and vanilla. Beat, using an electric mixer on medium, until the icing is creamy.

Place 1 of the cake layers on a plate and spread the top with icing. Place the other layer on top. Frost the top and sides of the cake with the icing, covering evenly.
