Ingredients
- 2 1/2 cups flour
- 3 tablespoons sugar
- 1 tablespoon salt
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground white pepper
- 4 tablespoons mixed chopped herbs, such as parsley, chives, thyme, rosemary
- 1 3/4 cups half and half
- 2 large eggs
- 1/2 cup butter, melted
- 1/2 cup crumbled goat cheese

Step 1
Preheat oven to 325. Lightly grease muffin tins or use paper muffin cups.
Measure and sift all the dry ingredients into a large mixing bowl. Stir mixed herbs into the dry ingredients to evenly distribute the herbs, ensuring that they will be in every bite of muffin.
In a medium mixing bowl, whisk together 1 ¼ cups of the half and half with the eggs and melted butter. Mix until combined well.
Add the dry mix to the wet mix with a spoon or whisk. Stir to combine, but do not overmix. Once combined, add the remaining half and half. Fold in the goat cheese, using a rubber spatula. There should be specks and pieces of goat cheese throughout the batter. Pour the batter into the muffin tins and bake 22 to 24 minutes, until golden brown on top and a toothpick inserted into the middle of a muffin comes out clean.
Allow the muffins to cool 10 minutes and serve warm.
