Ingredients

  • 2 tbsp olvie oil
  • 4 boneless, skinless, chicken breasts (4 oz ea)
  • 1/2 t. The Lady's House Seasoning
  • 1 vidalia or other weet onion, thinly sliced
  • 2 tbsp all-purpose flour
  • 1 c. low-sodium chickne broth
  • 1/2 c 2% evaporated milk
  • 2 tbsp dry white wine
  • 1/4 tsp dried thyme

Step 1

In a large skillet, heat the oil over medium-high heat. Season the chicken with 1/4 tsp of the House Seasoning, add it to the skillet and cook until golden, aobut 2 minutes per side. Set the chicken aside on a plate.

Add the onions to the skillet, reduce the heat to medium, and cook, stirring freguently, until softened, 7-8 minutes. Sprinkle the flour over the oinons and stir for a minute to incorporate. Add the chicken broth, evaporated milk, white wine, thyme, and the remaining 1/4 tsp House Seaning. Raise the heat to high and bring the mixture to a boil, stirring constatntly. cook until thickenened, about 2 minutes.

Return the chicken to the skillet, spooning the sauce over the top of the chicken. Cover the skillet, reduce the heat to medium-low, and simmer gently until the chicken is cooked through, about 10 mintues.

Most chicken breast these days will tend to be a bit larger than 4 ounces, so if you are counting calores and your fillets look big, be sure to trim them down to keep this recipe in balance. But don't toss your trimmings. Save them in the fridge or freezer for your next stir-fry, or add them to your mext soup.
