Ingredients
- 12 oz small rigatoni
- 1/2 lb sliced bacon (9 slices)
- 1 med red onion, sliced
- 1 pint grape or cherry tomatoes
- 1/2 head iceburg lettuce

Preparation
Step 1
1- Cook pasta according to directions, drain, and return to pot.
2- Meanwhile cook bacon in large skillet until crisp (medium to low-medium), 6-8 minutes; transfer to paper towel and break into pieces.
3- Discard all but 2T of drippings and return skillet to medium heat. Add the onion, season with 1/4 t each salt & pepper.
4- Cook stirring occasionally, until tender (5-6 minutes). Add tomatoes, and cook for an additional minute.
5- Toss together lettuce, pasta, and onion-tomato mixture. Fold in bacon.
Serve hot or room temp.
