Ingredients

  • Cream Puffs
  • 1 cup hot water
  • 1/2 cup butter or margarine
  • 1 cup sifted all purpose flour
  • 1/2 tsp. salt
  • 4 eggs, unbeaten
  • Filling
  • 1 envelope whipped topping mix
  • 2-1/2 cups milk
  • 2 (3.75 oz) pkg instant vanilla pudding mix

Preparation

Step 1

Cream Puffs
1. Bring water to boil in sauce pan; add butter; stir until melted. Add flour, salt all at once, stirring vigorously.
2. Cook over low heat, stirring constantly until mixture leaves side of pan and resembles mashed potatoes - about 3-5 minutes.
3. Remove from heat; cool about 1 minute. Add eggs, one at a time, thoroughly beating with spoon after each addition until smooth.
4. Drop heaping tbsp. of mixture 2" apart on greased cookie sheet; shappe into rounds with peak in center.
5. Bake 10 minutes at 450 degrees F; reduce heat to 400 degrees F; bake 20-25 minutes longer or until pulled and golden brown.
6. Cool puffs; fill centers as directed; sprinkle tops with powdered sugar.

Filling
1. Make the whipped topping using 1/2 cup milk following package directions.
2. Make the vanilla pudding using 2 cups milk (1/2 the amount called for on the pkg).
3. Fold the whipped topping into the pudding; refrigerate. Fill cream puffs or eclairs.
