Ingredients
- 12 H-E-B Corn Tortillas, cut into thin strips
- 1 can (14.5 oz.) Hill Country Fare Medium
- Enchilada Sauce
- 1 package (8 oz.) H-E-B Mexican Blend
- Shredded Cheese
- 1 cup chopped onion
- 2 medium tomatoes, chopped
- 1/4 cup chopped cilantro

Preparation
Step 1
1. Heat oven to 450°F. Coat a 2-quart
microwave-safe baking dish with
nonstick cooking spray and set aside.
2. Combine tortilla strips, enchilada sauce,
cheese, onion, tomato, and cilantro. Toss
to coat ingredients. Pour enchilada mixture
into prepared baking dish. Cover loosely
with plastic wrap and heat in microwave
oven for 5 minutes on high power.
3. Remove plastic wrap and bake
on center oven rack for 10
minutes or until cheese is
bubbly.
