  • 6 H-E-B Corn Tortillas, cut into thin strips
  • 1 cup H-E-B Shredded Cheddar Cheese,
  • regular, reduced fat, or fat free
  • 2 cups chopped tomatoes
  • 2 cups H-E-B Frozen Fajita Vegetables
  • 1/4 cup chopped cilantro (optional)
  • 8 slices H-E-B Fat Free Thin Sliced Ham,
  • chopped
  • 1 container (32 oz.) Hill Country Fare Real EggProd uct, beaten until frothy

Preparation

Step 1

1. Heat oven to 325°F. Coat 11-x-17-inch
baking dish with nonstick cooking spray
and set aside.
2. Combine tortilla strips, cheese, tomatoes, fajita vegetables, cilantro,
chopped ham, and egg product in prepared
baking dish and spread mixture evenly. Bake on center oven rack for 45 minutes or until knife in center comes out clean. Cut into squares and serve.
