  • 1 teaspoon vanilla

Step 1

1. Have ready a heavy saucepan, a bowl filled with cold water and a thermometer.
2. Pour 1/2 cup heavy cream into saucepan, resting thermometer in liquid.
3. Add sugar and butter, stirring over low heat until sugar dissolves and mixture boils.
4. Continue boiling, without stirring, until thermometer registers 238 degrees F.
5. Immediately remove from heat and place bottom of pan in bowl with water.; let cool until lukewarm.
6. Beat remaining 2-1/2 cups heavy cream and vanilla in large bowl with the mixer on medium speed, until soft peaks form.
7. Whisk about 1/2 cup into caramel, then another 1/2 cup.
8. Add caramel mixture to remaining whipped cream and beat a few seconds until stiff.
9. Use immediately or refrigerate.
