Ingredients
- 10 oz. pasta
- 3 T. Olive Oil
- 4 med zucchini
- 2 garlic cloves, minced
- 3 oz crumbled goat cheese or grated parmesan
- 1/3 cup mint, basil or parsley, chopped
- 1 T. lemon juice and zest (optional)
- 1/3 cup toasted pine nuts or almonds
- salt and pepper

Step 1
Heat oil in large skillet. Saute zucchini over med. high heat until golden brown. Add chopped garlic, salt and pepper. Cook pasta in boiling salted water for 3 minutes. Ladle 1/3 cup pasta water into skillet before draining. Drain pasta. Add to skillet. Toss in cheese, herbs nuts, lemon and zest. Season with salt and pepper
