  • 2 cups flour
  • 1 tsp salt
  • 2/3 cup crisco
  • 4-5 cups of peaches
  • 3/4 c sugar
  • 1 tsp almond extract
  • 2 tbsp butter
  • deep pyrex bowl
  • rolling pin

Preparation

Step 1

Sprinkle a little flour over sliced peaches in a bowl. Add enough sugar for peaches to make their own juices, 1/2 tsp of almond extract.

Sift flour and salt in a bowl, mix in crisco with two knives til crumbly. Take glass of ice water and add 2-3 tbsp. into the flour mixture until it forms a ball. Put flour on counter or cutting board and roll out 1/2 dough almost as thin as a pie pastry. Take a knife and cut dough into pieces and place in deep pyrex dish laying piece over piece. Dough will hang over edge of bowl. Once the bowl is covered completely pour in peach mixture with juice. Cut up some butter and place in the peach mixture. Take the remaining dough an roll out. Cut in strips and place over top of bowl in criss-cross fashion. Trim around the edge and bake at 325〫 til brown and bubbly in the middle of the bowl. Put pan under rack in over to hold any bubbling over.

Serve warm with ice cream
