Ingredients
- 6 cups rolled oats
- 2 cup Smart Balance Rich Roast Creamy Peanut Butter
- 2 tsp vanilla extract
- 2 cup granulated sugar
- 2 cup brown sugar
- 1 cup milk
- 2 stick Smart Balance Blended Butter, unsalted
- 1 cup organic coconut
- 4 cups dark chocolate chips

Preparation
Step 1
Coat an 8-inch glass-baking dish with cooking spray.
In a large mixing bowl, stir together the oats, chocolate chips, peanut butter, ¼ cup of the coconut, and vanilla extract; set aside.
In a small saucepan, combine the sugars, milk, butter and salt over medium heat. Bring to a full boil and boil for 2 minutes.
Immediately pour the hot mixture over the oatmeal mixture and quickly stir to combine.
Pour the mixture into the baking dish and press until evenly distributed.
Sprinkle the remaining coconut over top and gently press them into the top of the mixture.
Allow the bars to sit at room temperature for at least 30 minutes before cutting into squares.
