I made this for Thanksgiving. It was light and almost like a custard cake.

Ingredients

  • 4 eggs (separate yolks from whites) at room temperature
  • 1 T water
  • 1/2 c plus 2 T sugar
  • 1 stick butter, melted
  • 3/4 c flour
  • 2 c milk lukewarm
  • Powdered sugar for dusting

Preparation

Step 1

Preheat oven to 325
Grease a 8x8 inch baking dish.
Separate eggs, add the eggs whites to a bowl and beat with a mixer until stiff. Set aside.
Beat the egg yolks with sugar until light. Add butter and water and continue beating for another minute or two then add the flour and mix until smooth. Slowly add the milk and beat until everything is well mixed,. Add the egg whites a third at a time and gently fold them in using a spatula, repeat until all whites are added,
Pour batter into baking dish and bake for 60 to 70 minutes or until top is lightly golden. Sprinkle some powdered sugar on the cake after it is cooled.
