Ingredients

  • 6 bacon strips
  • 3/4 cup chopped pepper
  • 1 tsp. salt
  • 6 eggs
  • 6 cups frozen hash browns
  • 1/2 cup chopped onion
  • 1/4 tsp. ground pepper
  • 1/2 cup shredded cheddar cheese

Step 1

Cook bacon until crisp. Crumble bacon and save 2 Tbs. of drippings. Add potatoes, pepper, onion, salt and pepper to drippings, cook and stir for 2 minutes.

Cook and cover for approximately 15 minutes. Make 6 swells in potatoes. Break one egg into each swell. Cover and cook on low heat for 8-10 more minutes or until eggs are set. Sprinkle with cheese and bacon.
