Ingredients

  • 2/3 cup foul
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1 cup sugar
  • 1 cup firmly packed brown sugar
  • 1 cup buttermilk
  • 3/4 cup vegetable oil
  • 4 eggs
  • 11/2 tsp vanilla
  • 1 lb bag of carrots peeled and grated
  • 1 (8oz can) crushed pineapple (drained)
  • 1 cup chopped walnuts
  • 1 cup coconut
  • 1/2 cup of raisins
  • Cream Cheese Frosting
  • 1/2 cup butter
  • 1 (8oz pkg. cream cheese)
  • 1 (16oz. powder sugar)
  • 2 tsp grated orange rind
  • 1 tsp vanilla

Step 1

Combine the first 7 ingredients in a medium bowl, set aside. Combine sugars, buttermilk, vegetable oil, eggs and vanilla in a large bowl, stir until all ingredients are well blended. Add flour mixture, carrots, pineapple, walnuts, coconut, and raisins stir until blended.

Grease 3 8" round pans. Line with waxed paper and grease and flour waxed paper. Pour batter into cake pans and bake at 350〫 for 30 minutes or until tooth pick comes out clean. Cool for 10 minutes and invert cakes onto wire racks until completely cool.


Combine butter and cream cheese in a large mixing bolw. Beat until light an fluffy. Add sugar, orange rind and vanilla and mix well.

Spread cream chees frosting between layers and on top and sides of cake. Cover and refrigerate overnight before cutting.
