  • 3 - 5 LB TRI TIP
  • TNT RUB
  • 4 TBSP GROUND MUSTARD
  • 3 TBSP PAPRIKA
  • 3 TBSP CHILI POWDER
  • 3 TBSP MSG
  • 2 TBSP SALT
  • 2 TBSP GARLIC POWDER
  • 2 TBSP BLACK PEPPER
  • 2 TBSP WYLERS CHICKEN GRANULES
  • 2 TBSP CELERY SALT
  • 1 TBSP ONION POWDER
  • 1 TBSP CAYENNE POWDER
  • 1 TBSP CHIPOTLE CHILI POWDER
  • 1 TBSP GROUND OREGANO
  • 1 TBSP GROUND THYME
  • 1 c water
  • 3/4 c light corn syrup
  • 1/2 c tomato paste
  • 2/3 c vinegar
  • 1/3 c dark brown sugar
  • 3 T molasses
  • 1 1/4 t liquid smoke
  • 1 t salt
  • 1/4 t onion powder
  • 1/4 t black pepper, Ground
  • 1/4 t mustard, Ground
  • 1/8 t paprika
  • 1/8 t garlic powder
  • dash cayenne

Step 1

RUB,

MIX ALL INGREDIENTS TOGETHER AND APPLY TO TRI TIP ROAST, PLACE IN FRIDGE OVER NIGHT, THEN INTO SMOKER AT 225 SMOKE WITH HICKORY, MISQUITE OR OAK NO MORE THEN 4 HOURS OF SMOKE.

START BBQ SAUCE IN CROCK POT ON HIGH,, LET SIMMER, AFTER SMOKING BRUSH TRI TIP WITH BBQ SAUCE AND LET CARAMELIZE FOR 20 MINUTES THEN APPLY ANOTHER COAT,,, REPEAT.


BBQ SAUCE

1. Combine all ingredients in a medium saucepan over high heat and whisk until smooth.

2. Bring mixture to a boil, then reduce heat and simmer uncovered for 45 minutes or until thick.

3. After the sauce cools you can use it immediately, but it's best to store it in a covered container in the refrigerator overnight where the flavour improves.
