Ingredients
- 2 tablespoons olive oil
- 6 celery stalks, chopped
- 5 medium carrots, chopped
- 1 medium yellow onion, chopped
- 1 medium sweet potato, peeled and chopped
- 3 pounds boneless, skinless chicken breast
- 1 13.5-ounce can of coconut milk
- 1/2 cup chicken broth or stock
- 3 tablespoons of yellow curry

Step 1
Pour the olive oil into the bottom of the slow cooker.
Chop the celery, carrots and onion and place them in the slow cooker.
Peel and chop the sweet potato and add it on top of the vegetables.
Dice the chicken and add it to the slow cooker.
Add the coconut milk and chicken broth.
Stir in the curry powder.
Cover and cook on high for four hours or on low for six to eight hours.
