Ingredients

  • 1 1/2 cups flour
  • 3/4 cup ground flaxseed
  • 3/4 cup oat bran
  • 1 1/2 cups brown sugar
  • 2 t. baking soda
  • 1 t. baking powder
  • 1 t. salt
  • 1 T. cinnamon
  • 3/4 cup milk
  • 2 eggs
  • 1 t. vanilla
  • 1/2 cup vegetable oil
  • 2 cups shredded carrots
  • 2 apples, peeled & shredded
  • 1/2 cup raisins
  • 1 cup walnuts

Preparation

Step 1

Preheat oven to 350 degrees.

Mix dry ingredients, set aside.

Combine other ingredients; add to dry ingredients.

Fold in last 4 ingredients. Fill muffin cups 2/3 full. Bake 15-20 minutes.
