Ingredients

  • Preheat oven to 350 degrees
  • 1/2 pounds ground beef or turkey
  • 2 T olive oil
  • 1/2 cup chopped onion
  • 2-3 t garlic, minced
  • 2 t chili powder
  • 1 t salt
  • 1/2 t ground cumin
  • 1 1/2 cup cooked rice
  • 1 8 oz can salsa
  • 1 4 oz can chopped green chilies
  • 1/2 cup shredded Monterey Jack cheese
  • 6 medium bell peppers, tops removed and seeded

Preparation

Step 1

Preheat oven to 350 degrees
In a large skillet, heat oil over medium heat.  Add onion and garlic and saute til onion is translucent.
Add beef or turkey to skillet, crumble and brown.  Stir in chili powder, salt, cumin, rice, salsa,
chilies and cheese.  Spoon mixture into peppers.  Place peppers in baking pan filled with 1/2 inch of
water.  
I blanch the peppers before stuffing, especially if intending to freeze them.
