Ingredients
- 4 small baking potatoes
- 1 pound ground beef
- 1/4 pound Velveeta, cut into 1/2 inch cubes
- 1 small tomato, chopped
- 2 green onions, sliced
- 1/2 cup sour cream

Step 1
Prick potatoes in several places with a fork.
Microwave on HIGH 14 minutes or just until tender, turning after 7 minutes.
Meanwhile, brown meat in large skillet; drain.
Add Velveeta, tomatoes, and onion; cook until Velveeta is melted and mixture is well blended, stirring frequently.
Split potatoes; mash insides with fork. Top with meat mixture and sour cream.
